Chef Brett is a 30-year veteran of the food service industry. After living in several coastal areas, he was inspired to bring that unique taste to the street with a focus on fun, freshness, and craveable menu offerings reminiscent of the coast.
Brett developed his passion for the food industry through his first job working at Roy Rogers. He then earned his Bachelor’s degree in Hospitality Management, which was followed by his leadership roles at Ruby Tuesday and several independent restaurants. While becoming a professional chef at Scottsdale Culinary Institute, Brett mastered the art of creative cooking. During his 8 years working as a Corporate Chef for Nestle, he provided culinary knowledge and expertise to numerous regional and national restaurants chains. His passion for southern hospitality and unforgettable food will win your hearts. Brett lives in Frisco, Texas with his wife, Denise, and 3 beautiful daughters: Lauren, Stephanie and Jewel.
Chef Tim Halls Bio
Chef Tim Halls, General Manager, Dock Local started his culinary career after 10 years as an EMT and wanting to pursue his passion for cooking. While attending Scottsdale Culinary Institute, Tim and Brett formed a friendship and remained in touch over the past 20+ years. Graduating with an Associate’s Degree in Culinary Arts, Tim pursued diverse opportunities to grow his culinary and managerial skills during his career including Executive Chef for both the Bavarian Grill German restaurant and Enterhealth private rehabilitation facility, a General Manager of Baker Brothers American Deli restaurant and developed his own line of Tim’s Texas 2-Step BBQ Sauce & Rubs. He welcomed the opportunity to join the Dock team 3 years ago when Brett started up The Dock Food Truck, and later opened up The Dock @ Crockett Row Food Hall in Ft Worth, Tx.
